Airplane contrails are considered a type of clouds. Their formation and behavior depends on atmospheric conditions (winds, humidity, etc.) at those altitudes where they are formed. Yesterday I saw an unusual "weaving" of initially parallel contrails. This happened very quickly, in less than one minute. The bottom photo is a part of the previous one, taken with a larger zoom.
